An interview with Apprentice, Sam Morgan
We believe that having apprentices in our business is a productive and effective way to grow talent and develop a motivated, skilled and qualified workforce.
We wanted to share our appreciation for our apprentices by sharing some of their inspirational stories, charting the journey of an amazing team member who is studying for a qualification under an apprenticeship:
In this interview we talk to Sam Morgan to find out more about their on the job and off the job learning
Tell us a little about yourself
“I’m Group Executive Chef for The Venues Collection. I’ve been with The Venues Collection for just over two years, and with Compass Group for six years.
“When I’m not working, you’ll find me with my daughters, we love to cook together.”
What are you studying?
“I’m studying for my NVQ Level 4 Senior Culinary Chef qualification. It’s an 18-month course and I started in it last August (2021).”
Why now?
“I was fortunate to be selected to take part in a ground-breaking culinary apprenticeship programme in collaboration with the esteemed chef Marcus Wareing. We are part of Compass Group UK & Ireland and the programme has been developed by them in collaboration with the Michelin starred chef and Masterchef judge.”
What impact will this have on your career?
“I am building skills, growing my knowledge and expanding my imagination in order to enhance and improve what I do within my job and how I then develop my team. This course is all about futureproofing chefs and forging a new generation of industry leaders and I’m really excited to be part of this ground-breaking initiative and seeing where it will take me.”
How does the study time fit with your ‘day job’?
“We meet up with Marcus for two days, every two months for hands on training, one to one coaching and mentoring, and then in between those sessions we have weekly training meetings, projects to complete, and preparation to do for the coming onsite training too. We are each allocating 20% of our time to this which is a good amount of time to find in any role. Being able to juggle work commitments and study time has been a challenge but it is very much worth it; I have managed to combine many of my projects for both my work and the qualification, leading to better quality outcomes on both sides.”

As well as supporting and developing our team with apprenticeship programmes, we also specialise in providing accommodation for apprentices when they are away from home completing ‘hands on’ type training.

The Charter also includes a ‘duty of care’ programme including safeguarding options available if required.
